Cocoa Products

The history of cocoa is rich and fascinating, stretching back thousands of years. For ancient civilizations such as the Maya and Aztecs, cocoa was more than just a drink — it was a sacred gift. Cocoa beans served not only as rewards for warriors but also as integral elements in ritual ceremonies. Recognizing its value, the Maya began cultivating cocoa on a large scale, allowing this “healing gift of nature” to spread far beyond their lands.

The first European to taste a cocoa drink was Hernán Cortés. Until 1828, cocoa beans were primarily used to make chocolate beverages. Everything changed when Dutchman Coenraad Johannes van Houten invented the cocoa press — a breakthrough that made it possible to separate cocoa beans into cocoa butter and cocoa powder, paving the way for modern chocolate production.

From cocoa beans come a variety of valuable products, including cocoa liquor (mass), cocoa butter, and cocoa powder. Roasted beans are ground, de-shelled, and refined into cocoa nibs, which are then processed into cocoa mass. Pressing this mass yields golden cocoa butter, while the remaining solids are finely ground into cocoa powder — the essence of chocolate flavor.

Cocoa products are rich in beneficial nutrients such as antioxidants and minerals. Cocoa liquor contains powerful antioxidants — polyphenols, flavonoids, and catechins — which help reduce stress and promote the release of serotonin and endorphins, the body’s “happiness hormones.”

The deep, rich taste and aroma of cocoa products make them indispensable in confectionery production. They bring the signature chocolate flavor to sweets and perfectly complement ingredients like nuts and fruits, creating unique, harmonious flavor combinations.

For decades, Bucuria has been producing fine chocolate using only the highest-quality cocoa products, which define the taste, texture, and overall excellence of our creations. Cocoa is not just an ingredient — it is a gift of nature, embodied in every bean.
