Pectin

Pectin is a gelling agent and natural food additive (designated as E440 in ingredient lists). It has no restrictions on use, is recognized as a valuable dietary component, and does not contribute to energy storage in the body. This substance was discovered about 200 years ago, and since then scientists have continued to uncover new beneficial properties of pectin. It is found in many fruits, especially in apples and citrus fruits. Pectin is a remarkable natural ingredient widely used in confectionery production.

Its applications are diverse — it is used to create the gel-like texture of marmalade and jelly-filled candies, as well as to stabilize the foam structure of marshmallow products. Pectin helps achieve better structure, aroma, and flavor in jelly-based sweets.
